Fresh Vegetable Pizza (the not-so-hidden edition)

It’s January 5th, which seems to be one of the healthiest times of year. All around the western world, people are choosing to live healthier lifestyles and finally achieve their goals! Blah, blah, blah, New Year’s Resolutions, etc etc.
Anyway, now that I’m past all of that bullshit, I just want to let you know that I would gladly eat this pizza all year long. I admit this recipe is pretty diet-friendly, but that goes for almost every DFM entree.
If you consider vegetables, lean protein, and a healthy dose of fiber to be diet food, then we at DFM are on a perpetual diet. A really tasty diet.
Three words to describe this recipe: delicious, nutritious, and fast.
Fresh Vegetable Pizza
Spinach Pizza Dough - $2.28
2 cups chopped broccoli florets - $1.79
1 large carrot, grated - $0.10
1.5 cups shredded red cabbage - $0.30
1/4 cup feta cheese, crumbled - $0.92
8 ounces cream cheese - $2.00
1/2 cup plain yogurt - $0.50
1 clove garlic - $0.02
.25 tsp salt - $0.01
1 tbsp dried basil - $0.03
1 tsp dried oregano - $0.03
Directions:
- Prepare pizza dough according to directions, roll out into desired shape, and bake in a preheated 400 degree F oven for 15-20 minutes.
- Meanwhile, mix together cream cheese, yogurt, garlic, salt, basil, and oregano. This will be your “pizza sauce.”
- Once pizza crust has cooled, apply cream cheese mixture evenly to crust. Top with vegetables and feta cheese and enjoy. You may find it tastes a little better after refrigerating for an hour or so, but I personally don’t have the patience for that.
Makes approximately 8 servings.
