Pulled Barbecue Chicken Sandwiches

In celebration of the great Martin Luther King Jr., we at DFM couldn’t pass up this opportunity to make some good ol’ fashioned soul food. Mr. King loved southern cooking and was pretty well known for his unabashed love for the classic pecan pie. We apologize, Mr. King, for the lack of pecan pie, but we do hope this can suffice.
It might not be ribs, but we can assure you this sandwich will still raise this politely posed question: is the removal of barbecue sauce on the fingers properly disposed upon by way of the mouth? We hope so, because it’s quite simply too good to waste.
Serve these with Baked Sweet Potato Home Fries for a dollar meal.
Pulled Barbecue Chicken Sandwiches
For the barbecue sauce:
8 oz can tomato sauce - $0.40
1/4 cup ketchup - $0.12
1/2 cup white vinegar - $0.08
1/4 cup molasses - $0.62
1/4 cup brown sugar - $0.12
2 cloves garlic, minced - $0.02
1 tbsp chili powder - $0.05
1 tbsp crushed red pepper - $0.05
1/2 tsp ground black pepper - $0.01
For the chicken:
2 lbs chicken thighs - $1.98
pinch of salt - $0.01
pinch of ground pepper - $0.01
1 tbsp vegetable oil - $0.03
6 store-bought hamburger buns - $0.72
Directions:
- Over medium heat, add vegetable oil to a large skillet.
- Apply a light amount of salt and pepper to both sides of chicken thighs, then place in skillet, cooking on both sides until golden brown. This can take anywhere from 10-15 minutes per side, depending on how large the pieces of chicken are.
- Remove chicken from skillet and set on a plate to rest.
- Meanwhile, in a medium-sized saucepan, add all of the barbecue sauce ingredients and bring to a boil, reduced heat, and let simmer for about 20 minutes - reducing the sauce by about a fourth.
- Remove cooked chicken from bones and add to barbecue sauce, cooking just until chicken is heated through.
- Serve on toasted buns and enjoy!
