These are surprisingly good considering there are four cups of vegetables packed into the recipe, while somehow, the taste of the cabbage truly is unapparent. Really though, the best thing about these is you can frugally and healthily start your day with a nice dose of omega-3 fatty acids, a serving of colorful vegetables, and about a fourth of your daily recommended fiber intake.
Bran Flax Veggie Muffins
1 1/2 cups all-purpose flour - $0.15
3/4 cup ground flax seed - $0.65
3/4 cup wheat bran - $0.70
1/2 cup brown sugar - $0.24
1/2 cup splenda - $0.40
2 teaspoons baking soda - $0.05
1 teaspoon baking powder - $0.04
1/2 teaspoon salt - $0.01
2 teaspoons ground cinnamon - $0.07
3/4 cup skim milk - $0.15
2 eggs, beaten - $0.30
1 teaspoon imitation vanilla extract - $0.05
2 tablespoons vegetable oil - $0.06
2 cups shredded carrots - $0.30
2 cups shredded red cabbage - $0.50

- Preheat oven to 350 degrees F.
- In one bowl, whisk together all wet ingredients, then add vegetables. In a separate bowl sift together flour, baking soda, baking powder, salt, sugar, and cinnamon.
- Add ground flax seeds to dry mixture, then add wet ingredients to dry, mixing just until incorporated.
- In a greased muffin pan, divide batter evenly. Bake in the preheated oven for 15-20 minutes, or until a knife inserted comes out clean.
