The Hidden Vegetable Pizza

This pizza speaks to me. It moves me, you could say. See, it tastes like a rich and fattening Alfredo pizza but curiously doesn’t boast the calories or fat. Intrigued? Well, here is the secret:

That’s right. Vegetables. This pizza has managed to incorporate 10 ounces of spinach, 2 cups of cauliflower, and 1 baby zucchini into its fattening facade. I haven’t even mentioned the cabbage. The list of vegetables may scare some, but I guarantee picky eaters will be silenced with this one.
Coming out at just under a dollar per serving (99 cents, to be precise), this recipe is hearty, healthy, and comforting.
Hidden Vegetable Pizza
1 recipe Spinach Pizza Dough
2 oz. (roughly1 cup) shredded romano cheese - $1.20
2 cloves garlic, minced - $0.05
2 cups cauliflower, chopped – $1.43
½ cup milk - $0.08
3 tbsp olive oil - $0.45
¼ tsp salt - $0.01
¼ tsp black pepper - $0.01
1 baby zucchini (about ½ full zucchini), sliced - $0.46
½ cup red cabbage, sliced - $0.42
1 cup shredded part skim mozzarella cheese - $1.50
Directions:
- Preheat oven to 400 degrees Fahrenheit.
- Boil 2 cups cauliflower until soft. Drain cauliflower and add to blender. Add ½ cup milk to cooked cauliflower and blend until smooth.
- In a medium-sized saute pan, heat 3 tbsp olive over medium heat and add minced garlic. Cook garlic just until slightly toasted and add cauliflower/milk mixture. Reduce flame and simmer for five minutes. Remove cauliflower mixture from heat and add shredded romano cheese, salt, and black pepper. Set aside.
- Roll out spinach pizza dough to desired shape and add cauliflower sauce. Top with shredded mozzarella, sliced red cabbage, and sliced zucchini. Bake in preheated 400 degree oven for 15-20 minutes until bottom of crust is light golden brown.
